Frozen French Fries

Frozen French Fries

French fries are prepared by first peeling and cutting the potato into even strips. These are then wiped off or soaked in cold water to remove the surface starch, and thoroughly dried.

French fries are produced from frozen potatoes which have been blanched or at least air-dried industrially. The usual fat for making French fries is vegetable oil

French fries are served hot, either soft or crispy, and are generally eaten as part of lunch or dinner or by themselves as a snack, and they commonly appear on the menus of diners, fast food restaurants, pubs, and bars.

Fries can be topped more heavily, as in the dishes of poutine and chili cheese fries. French fries can be made from sweet potatoes instead of potatoes. A baked variant of the French fry ("chunky oven chips") uses less or even no oil.

Bamboo Rice (Moongil Rice)

Bamboo Rice (Moongil Rice)

Bamboo rice is collected by the tribes residing in the forest from the seeds of flowers, bamboo, is known for its highly nutritive qualities, rich medicinal values. A very good substitutes for the polished white paddy rice.  Bamboo rice (Mulayari) has become an important and major source of income for tribals living in the forests. Nature keeps all its treasures hidden deep inside her. From the heart of nature a rare and lesser know seed is being introduced “bamboo rice” these seed are gathered from the jungles of tropical rain forest, bamboos trees which are known to be the tallest of herb grasses which grow in tropical rain forests.

Some species of bamboos only bloom with flowers once in 40-60 years and often die after flowering. They compensate this by releasing huge amounts of flowers and seeds, one of many mechanisms that nature employs to ensure the survival of certain species.
Bamboo rice is not commonly available due to the reason that it takes many years for an aged plant to flower which is unpredictedable as these may vary from few years to 100 years for a bamboo plant to flower.
The name bamboo rice is also given to a short-grain rice that is infused with bamboo juice. This practice is prevalent more in the West. This imparts a green colour and that is very different. The bamboo rice goes very well with our South Indian curries, rasams and even curd. It is available in Tamil Nadu where it is called ‘moongil arisi’. It is cooked in the same manner as regular rice is cooked
The bamboo rice is sweet, pungent, nutritious and strong . It cures kapha, pitta dosha, removes toxic substances from the body and cures the disease in which the vital humors of the body are excreted through urine.
The nutritious and health value of bamboo rice is very remarkable. It is more healthy to have bamboo rice than the rice from paddy .Seeds used to treat menstrual disorders, respiratory diseases and infections.  Its rich content of proteins controls back pain, joints pain and rheumatic pain. The other medicinal and health benefits are Controls sugar, cholesterol and Blood pressure.Good for Pregnant women to overcome vitamin deficiency

Health benefits of Basil herb

  • Basil leaves hold many notable plants derived chemical compounds that are known to have disease preventing and health promoting properties.
  • Basil herb contains many polyphenolic flavonoids like orientin and vicenin. These compounds were tested in-vitro laboratory for their possible anti-oxidant protection against radiation-induced lipid per-oxidation in mouse liver.
  • Basil leaves compose of several health benefiting essential oils such as eugenol, citronellol, linalool, citral, limonene and terpineol. These compounds are known to have anti-inflammatory and anti-bacterial properties.
  • The herbs' parts are very low in calories and contain no cholesterol, but are very rich source of many essential nutrients, minerals, and vitamins that are required for optimum health.

  • Basil herb contains exceptionally high levels of beta-carotenevitamin Acryptoxanthin, lutein and zea-xanthin. These compounds help act as protective scavengers against oxygen-derived free radicals and reactive oxygen species (ROS) that play a role in aging and various disease processes.
  • Zea-xanthin, a yellow flavonoid carotenoid compound, is selectively absorbed into the retinal macula lutea where it found to filter harmful UV rays from reaching the retina. Studies suggest that common herbs, fruits, and vegetables that are rich in zea-xanthin anti-oxidant help to protect from age-related macular disease (AMRD), especially in the elderly.
  • 100 g of fresh herb leaves contain astoundingly 5275 mg or 175% of daily required doses of vitamin A.Vitamin A is known to have antioxidant properties and is essential for vision. It is also required for maintaining healthy mucus membranes and skin. Consumption of natural foods rich in vitamin-A has been found to help the body protect from lung and oral cavity cancers.
  • Vitamin K in basil is essential for many coagulant factors in the blood and plays a vital role in the bone strengthening function by helping mineralization process in the bones.
  • Basil herb contains a good amount of minerals like potassium, manganese, copper, and magnesium. Potassium is an important component of cell and body fluids, which helps control heart rate and blood pressure. Manganese is used by the body as a co-factor for the antioxidant enzyme, superoxide dismutase.
  • Basil leaves are an excellent source of iron, contains 3.17 mg/100 g of fresh leaves (about 26% of RDA). Iron, being a component of hemoglobin inside the red blood cells, determines the oxygen-carrying capacity of the blood.

Medicinal uses of basil herb

  • Basil leaves contain health benefiting essential oils such as eugenol, citronellol, linalool, citral, limonene, and terpineol. These compounds are known to have anti-inflammatory and anti-bacterial properties.
  • An important essential oil, eugenol has been found to have anti-inflammatory function by acting against the enzyme cycloxygenase (COX), which mediates inflammatory cascade in the body. This enzyme-inhibiting effect of the eugenol in basil makes it an important remedy for symptomatic relief in individuals with inflammatory health problems like rheumatoid arthritis, osteoarthritis, and inflammatory bowel conditions.
  • Oil of basil herb has also been found to have anti-infective functions by inhibiting many pathogenic bacteria like Staphylococcus, Enterococci, Shigella and Pseudomonas.

Italian Basil (Ocimum basilicum)

Italian Basil

Sweet basil, or Ocimum basilicum, actually was named from the Greek word “basileus”, which means king. Although one cannot imagine Italian cooking without basil, it might be surprising for many to find out that basil originated in India, and was brought to Italy via the spice route during ancient times. Basil became an integral seasoning in Italian cuisine, and in fact Italians had such appreciation for this herb, that it became a symbol of love.
  • Type: warm season annual
  • Planting time: after last spring frost
  • Features: large, aromatic leaves
  • Light: full sun
  • Soil: fertile, well drained but moist
  • Spacing: 18 inches
  • Plant size: 24 to 30 inches tall, 18 inches wide
  • Garden use: containers, herb beds, flower beds
  • Culinary use: Asian and Italian dishes
This herb is known around the world for its wonderful fragrance and flavor. The key ingredient in classic Italian pesto, Sweet Basil has big leaves that are fast and easy to grow so that you can make your own pesto to freeze for year-round use. It loves hot weather, so always wait until all danger of frost is past before planting in the garden in the spring, then harvest before the weather starts to cool down in fall. Great for containers, but be sure to keep watered. If you were to grow only one herb, this should probably be it. Dried basil just doesn’t have the aromatic quality of the fresh leaves, which are often added at the last minute to many Asian dishes.

Red Lettuce (Lollo Rosso)

Red Lettuce (Lollo Rosso lettuce)

Red leaf lettuce is a type of "leaf lettuce" which means it has crisp leaves loosely attached to a stalk, rather than the tightly attached leaves of romaine lettuce.  Very similar to green Leaf Lettuce except with a deep red tint to the edges of the leaves.  It's tender and perfect for salads because of its mild flavor.
Red leaf lettuce contains a host of nutrients like Vitamin C, Vitamin A, Vitamin K, B Vitamins, and minerals.
A non-hearting loose-leaf lettuce, Lollo Rosso has fringed and crinkled
leaves that are tinged deep red at their ends, with a fairly tender, yet crisp texture. The depth of colour varies with each variety. It contains the antioxidant quercetin, which is believed to reduce the risk of heart disease.

How to keep greens fresh:

    Lollo Rosso
  • Do not, we repeat, DO NOT store greens on the counter top un-refrigerated, or just throw them on a shelf in the fridge!  They will surely wilt and go bad quickly.

  • DO wrap lettuce or greens in a dry paper towel and place in plastic bag or airtight container in the fridge.  The paper towel will absorb any excess moisture that makes the lettuce rot and will keep it fresher for much longer.

  • Here is another plastic-free way to store greens in the fridge crisper drawer, lined with dish towels.
How to revive wilted greens:
If your greens DO start to wilt, here’s a simple, easy way to revive them…
  • Fill a large bowl with cold water and ice cubes and immerse the greens in the water for several minutes.
  • Remove the greens from the bowl and they will be perked up and crisp again.
  • Drain carefully on towels, or run individual leaves through a salad spinner to remove the moisture.
